<li><strong>醤油・味醂同量ずつ</strong>（私は250mlずつで作っています）</li>



<li><strong>昆布…</strong>5センチ位</li>



<li><strong>鰹節</strong>お好み量（できれば厚削りが扱いやすい）</li>
</ul>



<p>一般的な返しはこれより味醂が少なく砂糖が入ります。<br>私は砂糖不使用で作っていますが、よりコクを出したい場合は味醂を減らして砂糖を加えてください。</p>

<p><strong>せっかく添加物を気にして手作りをするのに調味料の時点で添加物が入ったものではもったいないです。無添加の昔ながらの作り方の調味料を用意しましょう。</strong></p>

<p>昆布は北海道展等で購入することが多いです。</p>

<h2 class="wp-block-heading"><strong>手作り麺つゆ作り方</strong></h2>



<p>手順としてはまず「返し」と呼ばれる調味料を作って昆布・鰹と合わせる方法です。</p>



<p>単純に全ての材料を合わせるだけでも作れるんですが、ベースを「返し」にすることでよりまろやかになり、火を入れない料理にも使いやすいので是非試してみてください。</p>
